Phyllo Eggs are a delicious and crispy appetizer and breakfast, featuring layers of flaky phyllo pastry filled with a savory egg mixture, herbs, and spices. Equipment
Mixing Bowls - For combining the egg filling ingredients.
Measuring Cups and Spoons - For accurate ingredient measurements.
Electric Mixer or Whisk - For beating the eggs (optional).
Spatula - For mixing and folding ingredients.
Baking Sheet - For baking the phyllo eggs.
Parchment Paper - Optional, for lining the baking sheet.
Pastry Brush - For brushing melted butter on phyllo sheets.
Knife or Pizza Cutter - For cutting phyllo dough into squares.
Ingredients
4 sheets phyllo pastry 4
2 tbsp. butter, melted 30 mL
4 tsp. parmesan cheese, grated fresh 20 mL
6 eggs 6
2 green onions and/or fresh basil, finely chopped 2
salt, pepper and cayenne to taste
Butter for greasing tins
Instructions

Brush sheet of phyllo with melted butter. Top with another sheet and brush with butter. Cut stack into six 4” (10 cm) squares. Repeat with remaining 2 sheets. Stack 3 squares together so corners do not overlap. Press into buttered muffin tins.

Sprinkle parmesan cheese into each phyllo-lined tin. Break 1 egg into each tin. Sprinkle with green onion and/or fresh basil, salt, pepper and cayenne.

Bake 15-20 minutes at 425°F (220°C). Pastry should be golden and eggs fully cooked.
