  • 6 eggs 6

  • 1 cup flour 250 mL

  • 2 tsp. white sugar 10 mL

  • 1/2 tsp. salt 2 mL

Instructions

In a 10” (25 cm), ovenproof pan, melt butter. Add apples, sugar and cinnamon and cook on the top of the stove until the apples are soft, about five minutes. Taste for sweetness.

Meanwhile, mix milk, eggs, flour, sugar and salt, beating well.

Pour the batter over the cooked apples. You may want to sprinkle some sugar and cinnamon over the batter for added flavor.

Bake, UNCOVERED, in a 425°F (220°C) oven for 20-25 minutes.

Notes

For a thinner pancake, halve the ingredients for the batter but bake in the same-size pan. Reduce baking time by five minutes. SERVING SUGGESTIONS Cut the pancake in wedges and serve from the pan. Serve with maple syrup, sour cream or ice cream. This is also good on its own.
