Why Choose Sour Cream Pancakes?

2. Easy to Make

This pancake recipe is straightforward and requires simple ingredients you probably already have in your kitchen. Whip them up in under 30 minutes, making it a quick and easy breakfast option for busy mornings.

3. Customizable

Tips for Perfect Sour Cream Pancakes

  • Use Room Temperature Ingredients: Bringing your sour cream and egg to room temperature helps create a smoother batter.
  • Don’t Overmix: Overmixing can lead to tough pancakes. Mix until just combined for the fluffiest results.
  • Keep Pancakes Warm: If you’re making a large batch, keep finished pancakes warm in a low oven (around 200°F) until ready to serve.

Equipment

  • Mixing Bowls - For combining the dry and wet ingredients.

  • Whisk or Fork - To blend the batter smoothly.

  • Measuring Cups and Spoons - To measure out ingredients accurately.

  • Non-Stick Skillet or Griddle - For cooking the pancakes.

  • Spatula - To flip the pancakes and serve them.

  • Ladle or Measuring Cup - For pouring the batter onto the skillet.

  • Cooling Rack (optional) - To keep pancakes warm without steaming.

Ingredients

  • 2 cups flour 500 mL

  • 2 tsp. baking powder 10 mL

  • 1 tsp. baking soda 5 mL

  • 2 tsp. sugar 10 mL

  • 1/2 tsp. salt 2 mL

  • 2 eggs, slightly beaten 2

  • 1/2 cup sour cream 125 mL

  • 2 cups milk 500 mL

Instructions

1
In a large mixing bowl, mix together the flour, baking powder, baking soda, sugar and salt.
2
In a separate bowl, mix the eggs, sour cream and milk. Beat well with a wire whisk.
3
Pour the milk mixture into the dry ingredients and beat with the wire whisk until the batter is fairly smooth. A few small lumps won’t hurt the pancakes.
4
Heat a greased griddle or heavy frying pan over medium-high heat. Pour batter onto the hot griddle and cook until the top is bubbly and the pancake is slightly dry around the edges. Turn and cook on the other side until golden brown.

Notes

Now, I have to tell you that pancake preferences are kind of a personal thing. We like ours on the thinner, lighter side so I often add just a little more milk. With a little practice you can make them to your own liking.
