Ingredients
1 cup vegetable oil 250 mL
2 cups white sugar 500 mL
3 eggs 3
1 1/4 tsp. vanilla 7 mL
2 cups flour 500 mL
1 tsp. salt 5 mL
1 tsp. cinnamon 5 mL
1 tsp. baking soda 5 mL
3 cups pared, diced apples 750 mL
1 cup chopped pecans or walnuts 250 mL
Caramel Topping:
1/2 cup butter or margarine 125 mL
1 cup brown sugar 250 mL
1/4 cup milk 60 mL
Instructions

To make the cake, beat together oil, sugar, eggs and vanilla. Beat three minutes at medium speed if you are using a mixer, slightly longer if you are beating by hand.

Mix the flour, salt, cinnamon and baking soda and add to the sugar mixture. Mix well. Stir in the apples and nuts.

Spread the batter in a greased 9 x 13” (23 x 33 cm) pan and bake at 350°F (180°C) for 1 hour.

TO PREPARE THE CARAMEL TOPPING
When the cake is almost finished baking, prepare the Caramel topping. In a heavy saucepan combine the topping ingredients and boil for 3 minutes.

Pour the caramel topping over the hot cake. Let the cake sit for a couple hours before serving.
