Equipment

  • Cutting Board - For chopping vegetables.

  • Sharp Knife - To slice the onions and other ingredients.

  • Mixing Bowl - To combine all the ingredients.

  • Whisk or Fork - For mixing the dressing.

  • Measuring Cups and Spoons - For precise ingredient measurements.

  • Serving Bowl - To present the salad.

  • Salad Tongs - For easy serving (optional).

Ingredients

  • 6 Spanish onions*, very thinly sliced 6

  • 1/2 cup vinegar 125 mL

  • 1/2 cup water 125 mL

  • 3/4 cup sugar 175 mL

  • 2 tsp. salt 10 mL

  • 1 1/4 cup mayonnaise or similar salad dressing 300 mL

  • 2 tbsp. celery seed 30 mL

Slicing

Slice the onions very thinly and place them in a plastic or glass dish.

Mixing Vinegar

Combine the vinegar, water, sugar and salt. Mix well to dissolve the sugar and salt. Pour over the onions and mix well. Put a plate on top of the onions and set a weight on it. A plastic bottle of oil or vinegar works well. Let the onions sit on the counter all day – overnight is best.

Drain the liquid

Drain the onions. (You will wonder where all the liquid came from!)

Serving

Combine the dressing and celery seed and toss with the onions. Put into a serving bowl and serve.

Notes

We often don’t have Spanish onions, so will use whatever is at hand. Strong onions can be toned down quickly by pouring hot water over the slices (especially if they have been separated into rings), allowed to sit for a while (five minutes will do) and drained – before continuing with the marinade. Serving Suggestion This is great served with beef or Jalapeño Goose. If there is any left over, pile it on a bun with beef or goose the next day for a super lunch!
